When I take my overnight rest, I dont have a sleeper cab and therefore cannot sleep in my cab. Can I put a blowup bed in the back of truck or pitch up a tent with a blowup bed as suitable rest.

Although there is the legal requirement to take your daily rest, there is no requirement of how you do it. The tacho will not record that you weren't in the cab. There used to be loads of overnight stops with rooms when sleepers were uncommon, but I'm not sure any are left now, so unless your boss will stump up for a hotel room the blow up bed sounds as good an option as any.
I will give you a tip on sleeping in the back Pee, make sure the lock is inserted into the retainer! I have heard of drivers getting locked in by clever @rses, to your Qs, there is no problem sleeping in the back, but I take it, it's not a fridge van? brrrrrrrrr
