Enchiladas - how to...

I'm after making these - however, I want them to be as healthy as poss. I've lean mince & low fat cheese along with the other ingredients. But how do I make the sauce? My lot will not go for anything to spicy, so it has to be fairly mild - but will it not just turn out a bit 'bolognesey' without the spices?

can you just put a little chilli powder in - or hot paprika just to give it a hint without making it to hot to eat?
Sainsbury and Tesco do a nice range of chili beans. They already have sauce with the kidney beans. They are tasty but by no means too hot. I am a real wuss where hot food is concerned...
