If you want to play a song by sheet, it tells you how long to hold notes for, when to come in, which level of the piano you should be playing etc. If all you had was the keys it would sound very flat.
There's all sorts of tutorials online to help you learn to read sheet music, thats how I learned and once you get the hang of it, playing will be a doddle!
