I have completed grid, perimeter words and understand the title etc, but again after days of grid staring cannot see the word to be changed, any hints please as to where to look for the one letter change.

You're in the right place, G. Change the first letter of 36 down and think - as you might expect - Latin. It might also help to think of the meat rather than the animal.
