I currently have an Irish Provisional license....

But wants to drive in Australia.

Does anyone know if it's possible to justc change it over to an Australia provisional or will I have to sit the test again?

Confused here, you say ''sit the test again'' if you still have a only provisional licence you can not have passed the test so you have to 'sit it again'
anyway.
Driving in another country is only applicable to people who have a full licence from their home country so an Irish or any other provisional license is worthless outside the home country anyway.

& you have to sit a test in Ireland to get your provisional, which is what I did, and now im wondering will I have to sit another one in Australia even though ive already passed the test you need for your provisional!

As you do not have a full licence from your home country Ireland, you can not drive in Australia with it even with a supervising driver. So when you get to Oz you need to apply for an Austalian provisional licence.
Are you going to Oz as a visitor , working student, or to emigrate ?
visitors can not apply for a provisional licence , you need an Australian residential address.
Same would apply to driving in any other country including mainland UK (not sure about N Ireland) only a person who has a FULL driving licence from the home country can drive .
She's in Oz on a years work permit, which can be extended if her current employers sponsor her.

Claire....work your probationary period and then take lessons :-) xxx
