ScanGear CS is essential. CanoScan Toolbox makes using the scanner much easier. The uninstall utilities aren't needed (obviously!) unless you want to uninstall the other software.

I'm guessing that CanoScan Toolbox doesn't know which applications to use for each of the functions.
When you select the email function, for example, it needs to know which email client (such as Outlook Express, Thunderbird or Windows Live Mail) you want to use in order to send the mail. (Note that you can't launch a web-based email system directly from the scanner).
Similarly, CanoScan Toolbox will need to know which printer to use for photocopying and which image editing program you want to scan an image to.
Try opening CanoScan Toolbox (from Start > Programs > Canon > CanoScan Toolbox 7.0) to see if you can get anything to work from there. (I never use the buttons on the front of my Canon scanner).
For example, try clicking the 'Mail' button. You'll see a box labelled 'Link scanned images to'. That shows which email program should be opened. If it's blank you need to click on 'Set' and then on your chosen email program (e.g. Outlook Express).
Repeat with the other buttons.
If you've not got an image editing program which can accept scans from a TWAIN device (such as your scanner), install Irfanview:
http://www.irfanview.com/
(or your own choice of program, such as GIMP or another alternative)

I'm guessing that the absence of CanoScan Toolbox from the programs on your Start menu indicates that it's not been installed. (I'm assuming that the buttons on the front of your scanner make a call on the Toolbox but, as I never use them on my own Canon scanner, I'm not entirely sure).
The location of the Toolbox on my PC is at
C:\Program Files\Canon\CanoScan Toolbox Ver4.6\CSTBox.exe
Perhaps you should see if it's in a similar place on your PC (although 'Ver4.6' should be replaced by Ver7.0 because I'm using an older version than the one which you've downloaded). Otherwise try a search for 'CSTBox.exe'.
Just a thought though:
Have you actually installed the driver and the Toolbox, rather than just downloading the set-up files? (You need to double-click on the downloaded files in order to start the actual installation process).

I have a Canon Lide ..
YOU DO NOT NEED the Toolbox installing ... in fact it is a hinderance.
You just need CS. You can load the Canon help file .. it is all in there.
You must use the correct drivers for Lide .. for the correct model .. AND the 32 or 64 bit version. If it does not work .. You have wrong drivers.
Check it's installed correctly in Device Manager .. Imaging Devices... Canoscan Lide20
Chris .. You don't half complicate matters with all this baloney from Google. You must have 20 pages open.
