We take off as much meat as possible from the carcass then pressure cook in chicken stock, the legs and wings and as much carcass as will fit in the pressure cooker. When cooked for half an hour or so, we strip all the meat off the bones, then cook 6 large potaotes, 6 carrots and 1 large onion until tender. Cube a couple of each veg (to add to the soup at the last minute to give it "chunkiness") then blend the rest of veg into a puree, also blend or liquidise the meat and stock down preferably not too finely. Add the two together, season well and finally add the cubed vegetables and extra pieces of turkey....... my family go mad for this soup!
