I tend to put a dash of red wine, dash of worcester sauce, or balsamic vinegar, fresh herbs to finish. overnight marinades also make the meat extra tasty.

tomato puree or tinned tomatoes help to make the sauce a bit richer.

I've always found that dumplings don't keep very well, so you might want to make fresh dumplings each night - and you can ring the changes with them instead of changing the flavour of the stew ... add some herbs, or powdered mustard, or grated cheese, finely chopped onions etc etc.

Balsamic vinegar is one of my secret weapons in the kitchen. I use it for added flavour, but it will also improve the keeping qualities of your stew. And if you're using vinegar, you can always add some sugar, which again is both flavour enhancer and preservative.

If you're making a roux use some dry mustard powder along with the flour, it adds a nice flavour with a bit of 'bite' yet doesn't taste mustardy!
a can of ale, it makes a lovely rich gravy.
my mum used to make a stew and put red lentils in it, if it doesnt fill you up, it least it will give you wind.
lol
A couple of dollops of Heinz tomato ketchup really adds to the flavour of stews and things
