Anglo means 'of England; of the English', so Anglo-Saxon means 'a member of a West Germanic people who settled in Britain.' A similar construction can be seen in Anglo-Indian; Russo-Japanese war; Italo-American. So, it would not be grammatically correct to say 'Angle-Saxon'. That is mixing up two nouns.
