Any business that sells things - ie keeps a 'stock' of them - does a regular 'stock-take'. That is, a check on how many of each item are currently on the shelves, as it were. The same idea applies to considering other sorts of situation in which a general oversight of matters is occasionally required. Hence, to 'take stock' means to have a look at the whole situation.

'Thinking better' of a situation suggests that you made a decision which you later came to regret, realising that it was not the best decision in all the circumstances. Now, therefore, it is necessary for you to make a better job of the thinking process that led to the decision, in the hope - this time - of coming up with an improved solution.

'Forcing the pace' probably started life in a military situation. Soldiers are used to marching at a steady given speed - ie pace - but occasionally they have to increase that in order to reach a destination on time. The sergeant at the front of the company might, therefore, have to 'force the pace'; in other words, press them to move faster.
