How do I finish top of sponge cake?
13 Answers
I made two sponges last night which I am going to sandwich together with jam and/or cream in the middle. But I am not sure how to finish off the top. I would like to maybe put on jam and icing but I'm not sure that would work. Should I heat the jam first and put it on then put on the icing? Does anyone think this will work okay or what way should I do it? Or should I do something else?

I will often do a celebration cake with Victoria sandwich with jam and butter cream filling, then on the sides and top I spread a thin layer of jame this is difficult as it picks up cake as you spread. Then roll out icing lower on top with rolling pin, smooth down sides, trim excess with knife and decorate...or eat
