YESTERDAY'S SOUP!
CAULIFLOWER AND APPLE
(serves 4 )
1 tbs olive oil
25g butter
100g onion, thinly sliced
350g cauliflower, thinly shaved
1 cox apple. cored and diced
1 veg stock cube
375ml milk and 375ml water
salt and freshly ground pepper
Heat the olive oil and butter in large saucepan
cover and sweat for 3-4 mins
Add cauli and saute for a further 2-3 mins
Add remaining ingredients and bring to boil.
Reduce to a simmer and cook for 5 mins or until cauli is cooked
Put into blender and whizz until smooth
Adjust seasoning to taste and ENJOY
