Carrot cake
Has anyone got a recipe for carrot cake? I have tried google but they all seem to be american recipes with nuts and dried fruit. I found one in a old copy of Good Food magazine but that used crushed pineapple as well, which I will try as a last resort. Many thanks in advance.

Or try the recipe source, www.epicurious.com. Enter search term and see what comes up. Have a go at carrot cake with orange marmalade frosting, or add Irish Cream to it, or coconut......
If you're interested, here's a beautiful topping you won't find in the shops. We use it for our carrot cake in our bakery and it's one of our biggest sellers...
Firstly Take 3 parts Icing sugar and mix it with 2 parts butter or preferably and high Quality Cake Margarine and a splash of vanilla essence. Mix for about 5-8 minutes until the mixture comes up. then take some of the mix and add it to an identical amount of philadelphia cheese and a couple of drops of lemon essence. And beat up again...
Really beautiful and simple, but keep it refrigerated.
