HELP WITH AUBERGINES ASAP! (Eggplant)

I have a few that I need to use today, what can I do with them? Can you steam them or are wouldn't this be doing them justice?

A drop of lemon juice in the pan is nice.

Also makes a great lasagne type dish, layered up with tomato / onion and cheese / bechamel sauce
In the final extremity, I often stick some in a curry - it mushes down and gives a nice thickness to the sauce

You could also make Aubergine Parmigiana...
Slice into thick rounds,...then you can either fry them immediately in olive oil, or-you can dredge them in flour followed by beaten egg-and then fry.
Layer in a baking dish with sliced mozzarella cheese (good quality buffalo mozzarella),tomato sauce and grated parmesan,then bake until golden and bubbling.
