Spun sugar - is it posh candy floss?

Flushed with the success of a new cook's blow torch and some creme brulee. I fancy having a go at making this for pudding baskets/tops.

I've watched a good few of the vids over on you tube -anyone here actually tried it? And can you make it in different colours?

I imagine, on a domestic level, if you added food colouring to ordinary granulated sugar, it *ought* to be successful........but don't quote me on that!

you have to be careful with the temperature. Spun sugar tends to be golden because the temp difference between white molten sugar and the point where it turns is a very small one.

Cheers jack, I was thinking about red colouring on those lines so we'll see.

Woof, also take your points on choc pots thread about mess and doing it outside - whenever it stops raining! - seems a sensible suggestion.

One vid used what looks like a simpler way for producing angel hair. They'd cropped away the bowl and retaining band from a whisk to produce a cage-like tool that spun several strands at once.

if its red, the golden colour would probably blend in. use very small amounts of intense colour to dye the sugar before melting it.

don't use food the liquid colours, use pastes or powder
