Cut off the old leaves and make sure you don't bury the growing point - equally, make sure it's not standing proud of the soil. Strawbs are quite hardy, but if you are concerned about a hard winter protect them with cut bracken (not straw 'cos of slugs) or horti-fleece. Strawbs may pick up/transmit disease but bird flu isn't one of them :-)
