diet and nutrition qualification

I'm in early 40's and looking for a possible career change in the health, diet and nutrition areas. I have been looking at courses, OU diplomas etc , but am really confused as to which qualifications are recognised for work in this area. Is a full degree required or would a diploma be enough? any advice welcome . :)
