For more on marking an answer as the "Best Answer", please visit our FAQ.I think that Marcus Waring was right - I think that molecular cooking is what Heston Blumenthal is all about - but I think that Johnnie has not understood the brief - I would expect a fish course to have some fish in it! Can you imagine what the judges would say if that had been dished up in front of them!
Heston doesn't really like the term molecular gastronomy.
