Phone around and ask how much, and what experience you need - some cater for beginners and some offer rides for experienced riders. Some will even offer 'own a horse days' where you get to look after one for the whole day, grooming and exercising them (although this is more usually aimed at younger riders).
What a nice idea - your partner is very lucky.
As for a recommendation try this place (which I live near by the way!)
Located in North Northumberland right next to the Cheviot Hills and the beach so an ideal gift for your partner would be an organised day trip up into the Cheviots or along the beach (and in the sea!!!).
