Anyone know how to make custard that sets like blamanche for my trifles.

Mix two to three really big heaped tablespoons of custard powder to a jug, add a tablespoon of sugar and add some milk, enough to mix it to a paste, keep mixing until the mix is smooth and free from any lumps, then add more milk, up to three quarters of a pint, pour this mix either into a pan or you can heat it in the microwave, keep stirring as it heats, until it boils and goes thick. Leave to cool before using.
You need to make creme patissiere:
500ml whole milk
100g caster sugar
1 vanilla pod, split, seeds extracted
4 egg yolks
40g cornflour
1-2 tbsp cold milk
Put the milk in a saucepan along with 1 tbsp of the sugar, the vanilla seeds (you can also use natural vanilla extract) and the empty pod. Slowly bring to the boil.
While that is heating up, beat the egg yolks and sugar until pale and creamy.
Add a tbsp of cold milk to the cornflour and mix to a smooth paste
When the milk is on the point of boiling, slowly pour onto the egg mixture while beating continuously. Take out the vanilla pod.
Return the milk and egg mixture to the heat. Add the cornflour paste and simmer for 2-3 minutes, whisking all the time, until thick and smooth. Pour into a bowl, cover and cool until needed.
No need for custard powder!
