Lots of things to see, from just the countryside gliding past to the various towns and villages you will pass through and stop in.

think about Lisbon, we often go there for a short break.
There is a lovely old fashioned tourist tram from the central square in Lisbon that will take you up the hilly part and all around the central part of town, its very relaxing, never rushed and good fun.
You can catch the ferry boat [ about 50p] over water and go and eat where the locals go to eat at fish restaurants [ avoid the "touristy" fish restaurant area in central Lisbon - too expensive. There are many coach to tours available, try one to Fatima and the one to Obidos, from the train station [ ask because there are two] you can go to Cascais for the day have a stroll around and a nice open air meal and return in the evening, trains are clean and comfortable and on time.
For the more adventurous go by train from Lisbon to Porto and stay there for a few days, visit the wine lodges etc.
We dont book a hotel, but go to the tourist board in Lisbon airport on arrival and they book for us.
just an idea.
Maderia is very nice for a quiet holiday, but you may find it too hilly. Dublin is good too, but not the weather always.

I second the suggestion on Madeira. Although it is hilly you really don't need to walk anywhere unless around the centre of town which is delightful but then you just divide it up into short stints. Take along one of those "perch" type sticks or fold-ups and you can stop literally anywhere for a short rest - there are plenty of places to sit yourself down at intervals. There are loads of sightseeing tours to be made and the whole place is such a feast for the eyes and relaxing that I cannot imagine you regretting going there. Try to arrange your accommodation in or VERY close to Funchal if you can unless there is a good personal reason to do otherwise. If in Funchal then the option of a short walk in/around the town is always there.
How about Monaco? It is less than 2 square miles and you can get a taxi from door to door if you are going from one end to the other. It can be very expensive but it is really a lot of fun. Especially when the Monaco Grand Prix is on. You can find out more information about Monaco and Monaco Grand Prix Packages here: http://www.exclusivegp.com/monaco-grand-prix
