How do they make curly Fries?

Someone mentioned them earlier and i googled them and they seem to be one large fry.
How do they make this and do they utilise the whole potato or is a lot of it wasted?
Oh and what do they taste like and where can i get some from?

There is probably some waste At least here in the U.S. they are somewhat smaller than the other, iconic fries in thickness, cook more quickly and seem to stay crunchy longer...
