norwegian brown cheese

my brother brought me some norwegian goats cheese - hard brown cheese, bery rich and sweet .. got loads of it, could anyone recommend a recipe i could use it in??

I did a quick google search in Danish and Norwegian and only found one for a sauce with port and cheese. I can tell you though that the Norwegians are particular fond of this cheese when it is on top of a warm waffle. If you like the cheese it can be recommended. Personally I don't like it, but I have seen the look of pure bliss on their faces when they eat it.
I know that Shaneystar has lived in Norway, so if you get her attention she might be able to come up with something :)
