I have decided to be brave and try new foods. I'm starting with butternut squash but i have no clue how to cook it and what it actually goes with. Anyone know?
very nice roasted. Skin and deseed the squash. Cut it into cubes (about the size of the average dice you play games with). Drizzle with a little olive oil and roast with the spuds. have it with the traditional Sunday roast. MMMMMMmmmmmmmmm, getting hungry now.
I'm with Mortartube. Only i just cut it length ways into slices and roast them unpeeled. I peel them after, they have very hard skins when they are raw.
No need to skin them. The skin is often very tough. Just deseed and cut into chunks with the skin on. Sprinkle with olive oil and roast, like potatoes for about 25 minutes in a hot oven.
I would first peel it, scooping out seeds, then dice it. Place in a roasting tin with a good splash of olive oil, salt & black pepper, cover with foil & roast for 20 min. Take of foil & roast for further 10 mins. I promise it tastes lovely
With butternut AND acorn squash all I do is cut them in half lengthwise - scoop out the seeds and put the cut side down on the pan to roast them - when they are soft when you mash down on them - take them out - scoop out the squash and put butter, salt & pepper in it. You can do them the same way in the microwave. Way easier than cutting up that tough skin!!!
