solved it all but want to understand

why is 3 dn celeriac first clue cut off one vegetable first to produce another

I got upstairs as the answer to destination of home flight

cardigan as the answer to it is worn in the bay

stand in as the substitutes reputation has been cut short

Cut off the end of one vegetable (celer-y), add the first clue ie 1 across or iac and you have another vegetable - celeriac.

stairs are flight of stairs so in the home up flight is upstairs

there is a bay called cardigan

a stand in is a substitute if someone drops out -cut short

that was my reasoning as I came up with these answers.
