I have the instructions for the above and have successfully stored a number in the handset. Would anybody know how to either delete or changed one of the stored numbers, the instructions do not tell you.

I usually find that the best way to delete a number is simply to overwrite it.
In other words, just follow the instructions for storing a new number in that location. It doesn't matter if you've got the same number stored in more than one quick dial location.
