Can anyone tell me if it is ok to use demerrera sugar to make christmas cakes? I have quite a lot in stock!!!

Not really. You need the darkest sugar you can get. Barbados sugar or "pieces" as it used to be known. Almost black and very sticky
it may not dissolve very well either if it is large crystals,the soft dark brown sugar is a much finer texture
I have used it in my Christmas cakes and had no problems. I should have said in my first post to blitz it to make it finer. Sorry!
Hi..you can order from my best restaurants place.I know the place .my favorite restaurants is best for this Christmas cakes.
I would not really like to say as not a cook myself. Would it be possible to mix it half and half with your normal choice of sugar? I should think that would be okay to use.
