I made my first pumkin pie today, it was lovely but the recipe for the filling made to much for the size of dish I used, so can i freeze whats left to use another day? I used half soya and half coconut cream in place of dairy cream, it also has eggs in it and I don't know the freezing quality of these things.

eggs go funny when frozen, unless separated and whisked together and even then they aren't great. I don't imagine freezing the filling would actually be dangerous bit it might cook a bit grainy or weep.
Have no idea about the soya and coconut oils.
I reckon its worth a try but in the nature of an experiment rather than a cert.

thanks wolfgang, I did suspect that about the egg to be honest, so better cook another pie and freeze it that way
Is it just me who doesn't get sky's post??
You can freeze quiche so I don't see why not this. But I think it would need at least warming through to stop it being watery. Good luck!
