I love the occasional piece of cake. Any good healthier options out there please. I don't have any allergies etc, just a bit of a greedy guts sometimes! Many thanks in anticipation.
What about using low fat and no sugar but adding fruit - cherries etc
Or just buy the low fat slices they sell in the supermarkets - I like the Sainsburys taste the difference - cause - guess what - I cannot
1 cup each of all bran, sugar, mixed fruits answer nuts, self raising flour and black tea. Add some sweet spices and mix to combine. Bake in a loaf tin.
Special Fruit cake ( Fat/Dairy/Egg Free)
1cup orange juice, 1 cup s/r flour,1tsp baking powder, 500gm mixed fruit 1or2 tsp mixed spice. Method: soak fruit in o/j for 24 hours, mix with flour, put into 800gm loaf tin, middle oven 140c 1&half to 2 hours ( cover after 1 hour to crisp top). Delicious yum yum.

I am just throwing out a few suggestions - what about steeping the fruit in a tablespoon of alcohol for a seasonal taste
I don't know if my knowledge is superior, Ric, as there is every chance that you're a far more skilled baker than me. I just hate the taste of fruit teas though.
The alcohol is a good idea though - I would probably choose Cointreau or Grand Marnier.
There are spiced fruit teas that could be used-most have cinnamon in them...or a ginger tea would be good also.
The trouble with using dried fruit instead of sugar is that it will still be as sweet,as dried fruit is so concentrated....so not necessarily healthier.
i mug of kellogs all bran bunged in a bowl
add a mug of raisins
and a mug of skimmed milk
leave overnight
then add a mug of wholemeal flour
mix well and bung in a loaf tin
bake moderate oven for 45 mins to an hour.
slice and bung half inch lurpack on (Well it's low fat!)
