for indian!! wholemeal bread!
blend 25g of fresh yeast with a little warm water,taken from400ml's.
Add more of the water to thin the paste to a milky consistency, then cover and leave in a warm place until frothy.
Mix together 675g of strong plain wholemeal flour, and 2 tsps salt, rub in 1/2 oz of butter.Add the yeast liquid and mix to form a firm dough, adding a little extra flour if its too sticky!
Knead thoroughly until smooth and elastic, shape the dough in to a ball and place inside a large oiled plastic bag, and leave to rise until doubled in size.
Knock back(press down) and shape into loaves or rolls.Cover these with a cloth and leave to rise again.
Bake in a preheated oven at 200 degrees c, gas 6, for about 40 mins for a big loaf, and 30-35 mins for small loaves, or 15-20 mins for small rolls!!
