Hello,
I need a nice easy recipe for Christmas stuffing. Any help would be greatfully received. Wishing all a Merry Christmas!

No need to go overboard and make the whole thing yourself... Use a packet of Paxo or supermarket brand Sage & Onion and make it up with about 2 tablespoons less of water than recommended. Add some finely chopped onion softened in butter, some chopped streaky bacon, and some chopped prunes, chopped dried apricots or dried cranberries.
I really cannot emphasise enough that sausage meat instead of stuffing is what every man wants! Nice herby sausage meat mixed with some crushed walnuts, some cranberries, bit of onion or maybe a few chopped prunes makes for the most delicious stuffing! Beats the pants off that sage and onion crap!

1 packet of bacon (unsmoked streaky is best): 1 packet or tin of chestnuts (unsweetened if in a tin): 1 unwaxed lemon (waxed will do though): 1 large bunch of parsley: fresh thyme if you have it but not really necessary: 4 or 5 slices of white bread: salt and pepper


Bung the bread, parsley, thyme and chestnuts into a food processor and blitz. Add the bacon slice by slice. Take the rind off the lemon, add and blitz. Juice the lemon, add and blitz. Season and blitz then either stuff into the bird, or form into balls for roasting (they take about half an hour to cook depending on size)

Sorry chappers, I'm not a veggie but disagree. I hate pork based stuffings. Soften finely chopped onions in the microwave and add butter and enough fresh breadcrumbs to make a stiffish paste. Season with black pepper and lots of sage and then either stuff your bird or just bake in the oven until crispy on top.

This simple recipe has been used for about 40 years in my family - and definitely no sausagemeat :-)


8-10 slices med sliced bread, small strong onion, rind of large lemon or orange, small pack of parsley, half a pack of thyme, quarter a pack of sage, black pepper and sea salt.


Process the lot on pulse until well mixed. Taste, then place in a well buttered dish. Add a lump of softened butter to mixture, cover with foil and bake on 180 for about 30 minutes removing foil for last 8-10 minutes.
