Not a vegetarian meatloaf, but lovely just the same.
Cut broccoli into smallish florets and boil for 5 mins. Drain well. Place a sheet of ready rolled puff pastry on a baking sheet. Put broccoli in the middle. Cut the rind off a chunk of brie (approx 200g) cut into rough slices and arrange over the broccoli. Wet all edges of pastry and fold up (like a giant pasty) pinching the sides together where they meet and not leaving any open edges. Brush with milk if you like it shiny. Bake for 20 mins.
Otherwise seach for nut roast recipes and you'll find plenty of choice to make your own. Its often useful to leave out the word meat if search for veggie alternative. So try things like roast loaf, mushroom loaf etc.
Don't mean to be rude but....as a veggie, I don't actually want the products that are made to taste like meat, and I always go for a nut or lentil or bean based loaf. It might be worth asking your guests what they prefer.
