I have learnt that some friends coming over on Saturday are expecting a feeding. I'm a tad peeved by their expectation but secretly grateful as I have a lot of veg that needs using up. On the basis that there will be too much who fancies joining us for the following menu:-
Homemade herb/olive focaccia served with EVO, Balsamic vinegar and roasted garlic
Chicory, pear, blue cheese and sweet/salty almond salad
Ragu filled portobello mushrooms topped with cheese and baked
Feta, mint and pine nut courgette involtini
PSB tossed in garlic and chilli butter
Fennel, apple & walnut salad
Braised leeks with balsamic vinegar and toasted hazelnuts
