Banana Bread
3 or 4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar (can easily reduce to 3/4 cup)
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cups of all-purpose flour
No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, & vanilla.
Sprinkle the baking soda & salt over the mixture & mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack.
Remove from pan & slice to serve.

Banana Bread

1/4 cup of buttermilk or milk
1 tsp baking soda
1 tsp baking powder
2 cups of flour
1/2 cup of butter melted & cooled
1/2 to 1 cup of walnuts optional
Smash bananas in large bowl. add sugar & mix well. slightly beat eggs & add to bananas & sugar. Add buttermilk; mix thoroughly.
Slowly add in baking soda baking powder & flour-be sure to mix well to avoid clumps of flour in your bread. After well blended gently stir in melted butter & nuts until combined.
Grease & flour one loaf pan.
Pour batter into pan & bake at 350 for 1 hour. cool in pan for 10 minutes; turn out to a wire rack.

Banana Nut Bread
1 cup white sugar
1 cup brown sugar (packed)
1 cup butter
3 eggs
2 cups mashed bananas (about 4 very ripe bananas)
3 cups all-purpose flour
1 1/4 cups buttermilk
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1 teaspoon vanilla extract
2 teaspoons cinnamon
1 cup chopped nuts
Preheat oven to 350 degrees F.
Cream together shortening & sugar. Add eggs one at a time, beating well after each addition. Mix in bananas, buttermilk, & vanilla. Mix in flour, cinnamon, baking powder, & baking soda. Stir in nuts if desired. Pour batter into two greased 9x5 inch pans.
Bake for 50-60 minutes in the preheated oven, or until a toothpick inserted into the center of the loaf comes out clean.
