I've been at my workplace for nearly 5 years, new owners took over a year ago and none of the staff have been given contracts even though we have bought the subject up a few times. We are being paid the national minimum wage through our banks & on time. I would like to know what period of notice would i need to give...........if any, to quit??

If the contracts haven't changed then your initial contractual terms and conditions apply. Notice terms are a key element of an employment contract.
I assume people have given notice before so there must be something in place
Do you still have your initial letter of appointment from the company? If you don't have a contract then that would be the next best thing, and it should say something about period of notice. If not, do you get paid weekly or monthly? If you really have no paperwork anywhere, then the time period from one pay day to the next would surely suffice.
Your previous contracts with the old owners may still be valid as they were transferred with the company's assets and sales contracts etc.......so what do you have in your old one.
I think it is the period you are paid unless otherwise stated

so if you are paid weekly then it is a week
and monthly then a month - clear month that is.

So....

To payroll officer

thank you so much for your replies, unfortunately there was never a contract (only verbal) with the original owner but the replies have given me food for thought x
I'm assuming you are in the UK.

You should always have a written statement of the main terms and conditions.

https://www.gov.uk/employment-contracts-and-conditions/written-statement-of-employment-particulars

An employer must give employees a ‘written statement of employment particulars’ if their employment contract lasts at least a month or more. This isn’t an employment contract but will include the main conditions of employment.

The employer must provide the written statement within 2 months of the start of employment.

If there is no contract then you are not obliged to give any more than a week's notice. Its up to the employer to tell you these things but if they haven't then they won't be expecting any more than the minimum requirement.
