Potato Salad---Can I Freeze It?

Made far too much potato salad for a group function. Has anyone tried freezing it ? We've a BBQ in three weeks time and successful freezing would save time and effort. Thanks for any advice.

Not sure. Would think that the mayonnaise might sort of separate and it wouldn't be very nice on defrosting, but have never tried it.
not sure to be honest, does it have mayo in it? as they may not be a good idea. I make my own, but generally don't have a lot left over..
I don't think it would be very successful so probably not worth risking, but I suppose you could try it in small batches. get one batch out next week and see what its life. if OK you have it for your BBQ, if not you can chuck it and start again.

I am assuming that the excess potato salad did not sit out at the function but has been in the fridge since you made it?

If not throw it out now.
I wouldn't.
The potatoes will go watery and the mayo will curdle on defrosting.
it's more to do with the mayo, so i wouldn't either.
