yesterday I bought a huge tub weighing about 1.5 kilo of marinated fresh anchovies for a tenner at the market. They are marinated in salt, vinegar and sunflower oil. I normally pay around £2.75 for 100 grms in the deli so this was a bargain. Will they keep in the back of the fridge in a tupperware or can I freeze them in smaller portions. Will they go mushy? Thanks.

Yes you could freeze fresh anchovies. My mum do it all the time. Sometimes she cleans, wash and then freezes them. Or she'd clean, wash and season them with fresh herbs and spices, and then freeze them.

I suspect the texture will be the biggest problem once they defrost. What does it say on the packaging, there's usually guidance there.

As far as keeping them in the fridge goes I'd decant into sterilised containers and use them in turn, when they get whiffy/furry chuck the lot out.

EcclesCake, thank you for your reply. I was wondering if the texture would be affected by freezing too. The original container had no sell by date, its the same large container I've seen the deli using to fill the little tubs they sell. I have some small plastic tubs so will decant into those and pack tightly, perhaps cover with a little extra oil -and hope for the best. I love them so doubt they will last to the whiffy stage but will keep an eye out, thanks again for the reply.
Cant help with your question but just wanted to say how much I love fresh anchovies and too long since I last had any.
Why don't you try freezing some of them...just to see how freezing affects them.

good idea Pastafreak (why didn't I think of that? ). Will bung a little tub in the freezer for a couple of days, defrost and report back. Oh I love the little b*gg*rs, tossed into pasta, or strewn over Salad Nicoise but they are bound to be loaded with calories so will have to ration myself.

Pastafreak, thanks for the link-not as bad calorie wise as I thought 100 grms goes a long way in a salad.
