Look for an Export option (or similar) on the menu drop downs.
It normally produces a file called a CSV file (Comma Separated Variables), This is where the data is laid out neatly, with the text separated by commas, like
Fred, Smith, 123456, 45 high st, Brighton.
You just need to make sure the format of the CSV matches that of Windows Mail.
If Windows mail wont read the CSV at least if you have it as a CSV file it should still be readable (you can edit it with a program like notepad), or you could import it into a spreadsheet like Excel.
