There's no easy way other than lots of leg work. Pick publishers who have published similar things to yours in the past and try them by phone and letter. Make sure that each approach gives you something positive to lead you on to your next approach. Don't be afraid to ask for help information and advice. Try the supermarkets, too, as the big five are all big cookery publishers now.
