How do I make a nice beef soup. What veg should I use?

Bung it in a saucepan add carrots ,leeks,potatoes,swede(any root veg) all diced up A handful of button mushrooms..A tin of chopped tomatoes and I always put a tin of butter beans in it .
Plenty of seasoning,garlic,parsley.Crumble a stock cube into it if you like. Add enough water for a consistency that you like and then either simmer it on top of the oven or shove it in the oven for about three hours ..you can leave it to simmer for ages actually.Give it a stir now and then. Then you can make some nice dumplings and plonk them in it.Or nice crusty bread.
This is more of a stew than a soup .Same thing really but heartier than soup.

I found this recipe, sounds quite nice. Might try it out tonight!
Saut� onion, carrot, celery & garlic in oil about 5 minutes, stirring occasionally. Add beef, broth, tomato sauce, salt, thyme, bay leaf & pepper. Bring to boiling; reduce heat to low, cover tightly and simmer 1 hour. Add barley and continue cooking 1 more hour, or until beef & barley are tender. Add green beans; return to boiling; reduce heat and simmer 2-3 minutes or until beans are heated through. Remove bay leaf before serving
