If I were you, I'd put them in big pots which you can move about. I assume that as a gift they are not yet really big. Keep them in shelter from the wind and the worst of the cold in winter, and push them into the sun in summer. I imagine you sometimes get temperatures below minus ten in winter in Fife, so be careful. Use fleece-wrapping if necessary. I have just lost an olive tree ( South of England) thanks to several very bitter winters. Fortunately, olives grow quite slowly in the UK, so you should be able to move them about for a few years yet.
