I need a good dessert recipe that is easy to make.
Desserts are my weak point and never been good at making them so I need one that cant really go wrong.
The simplest dessert recipe I know! A packet of ginger biscuits, some orange juice and whipped cream. Dip a biscuit in the orange juice and sandwich them all together with the cream. Cover in cream and leave in the fridge for a couple of hours. Sprinkle with crumble chocolate flake and enjoy!
waitrose have got a really nice opera and an orange one for sale at the moment. For posh and trendy and easy, you can't beat affogato. You put a scoop of excellent vanilla icecream in a bowl and pour over an expresso cup of strong black coffee. Serve with a brandysnap biscuit or something similar.
wack some biscuits of your choice (ginger,digestive,hobnobs) in a plastic bag to make crumbs. Put crumbs into the bottom of 4 - 6 wine glasses or dessert cups. In a bowl mix a tin of sweetened condensed milk with the same quantity of whipping cream -best to do with electric whisk if possible. Add the rind and juice of two lemons, mix lightly and divide between cups. the mixture will set like a creamy cheescake. Serve with some thin twirly biscuits or a dollop of whipped cream.
Hot fruit salad.
All white fruit but not citrus or pineapple. Tins of apples, pears, lychees, a few grapes and chunks of banana. Leave banana until last. Open tins, put fruit in metal or pyrex bowl with brown sugar and rum/brandy, leave for hours if you like - or minutes. Just after adding the bananas, put in oven. Any heat, depending what is already in the oven. When it is all hot, add more brandy/rum, flame it and serve.
Cream if you like.

Pinched this one from Nigella and it's delicious, but very very rich. Whip double cream till almost thick, then stir in some good quality lemon curd (if you have time, make your own, it's easy peasy). Chill, and just before serving crumble some meringue into the mix (crushed shop bought meringue nests are fine). Abso-blimmin-lutely gorgeous
