This is not a question but an idea to use up courgettes other than making soup.
Slice the courgette into rounds. Make up a mix of garlic powder, breadcrumbs, parmesan, salt and pepper. Dip the courgette rounds into milk, shake then dip into breadcrumb mix, lay on greaseproof paper and pop into a hot oven until golden.
They're really nice and crispy.
I'd change that a bit...line a baking dish with the courgette rounds. Drizzle over olive oil,add minced garlic and lots of ground pepper or a shake of chilli flakes. Then cover in breadcrumbs and parmesan...bake until golden.
If you are growing them, the flowers are delicious too. Pick and wash them, let them dry. Make a batter using self raising flour and fizzy water, salt and pepper until it is the consistency of thick double cream and dip the flowers in the batter. Shallow-fry in oil, drain and sprinkle with sea-salt. Delicious!
You can also stuff the flowers with chopped courgette, ricotta, pine nuts, parmesan, basil, lemon zest & oregano. Or you can stuff them with white crab meat, chilli and parsley.
They sound lovely cocc, might give that a whirl in the week for the kids.
Voddie, I've always fancied trying the flowers but I've always been a bit worried they'll be too delicate, I'm assuming they stand up to stuffing okay. ;)
Rocky, I had stuffed courgette flowers many years ago in Greece. I was VERY worried about trying them but they were LOVELY. They were stuffed with rice, lemon juice and chopped red peppers and chopped tomatoes. Absolutely delicious. I don't know if I'd go to the bother and fiddle faddle about doing them myself, but I'm pleased somebody else went to the bother of it all. I love courgettes so thank you to cocci for the recipe idea. xx
Best recipe for courgettes I know is grate equal amounts of carrot and courgette with a mandolin on the fine setting so matchstick sized. Stirfry in mix of butter/marge and oil.
I grate up any leftovers and use them either raw on a salad or put them in an ovenproof dish with a knob of butter (garlic butter opt) cover with foil and cook in over for about 20mins. Theyre delicious
