Addressing Emails In Mozilla

I use OE for emails, when I click 'Create Mail' a blank new email page opens I then click on 'To' and my address book opens and I can click on the recipient.
I am trying to help someone new to computers who is using Mozilla Thunderbird for emails. When we open a new blank email how do you add the recipient? I have read that you start to enter the recipients address and it will give you a list on possible names, but not everyone's email address begins with their name, I don't memorise them all, sometimes it's just an initial, so how do you enter them please?

If they are new to computers do you mean this is their first? If so they won't have established a cookie jar of email contacts nor will they have a contacts list.

To begin th you will have to laboriously type in their email address and add it to contacts with their other useful info.
