this is a healthy cheese cake recipe but you can modify it to your liking.
Preparation time (30 min)
Eating time (30 sec)
225g of roled oat (porridge oats)
50g ground almonds
4-5 table spoon of honey (try avoid strong flovured ones e.g. acacia)
2-3 tsp of orange/lemon zest
225g Greek yoghurt
200g Quark or Mascapone cheese
Fruits for topping e.g., stoned cherry/strawberries etc
Mix the oats, almonds, 1/2 of the zest and about 3-4 tbs of honey together till they bind nicely. Press them down firmly on the base of the cake tin (with removable bottom). Use a wet table spoon for this to make life easier. Put it in the fridge to set. In the mean time mix the yoghurt, quark, rest of the zest and honey together. Pour it on top of the base, level it out and shove the friuts on top. Put it back inthe fridge for an hour or so to set.
If you don't want it to be healty, exchange half the oats with ground Hobnob biscuits. This helps the base to be less crumbly and more tastey. Also black cheries for topping are my favourite.
hope you enjoy this.
