Setting Up An Ipod

my daughter's main pressy is an ipod touch and i don't know what i need to do before i wrap it.
We are going away over christmas and i want her to be able to do more than just look at it!
should I set it up beforehand on the pc or will she be able to do it all from the ipod itself?
