Chicken Casserole, Nice And Easy Recipe.

i have loads of chicken fillets, i have chicken bovril, herbs, tomatoes tinned , garlic, and a bag of tesco mixed casserole vegetables.

give me some ideas.

Hi beezaneez - you may have sorted it already

fry off some chunky cut onions, remove and fry the chicken pieces so they pick up the flavour.
In to a casserole dish place all the other ingredients you list above according to taste, season, add a little water & bung in the oven - dumplings too? mashed potatoes?

I've got a slow cooker, I'd just sling the whole lot in the cooker with some chicken gravy, and leave it for a few hours. Works for us!

i was going to go buy some peppers ? i think the casserole would taste better with chicken on the bone , instead of fillets , hence i want to spice it up a little but not too many ingredients.

Aren't the casserole vegatables rooty things like carrots and stuff? I wouldn't use those with the tomato and herb theme, one or the other. Plenty of garlic and herbs, some smoked paprika will give it a kick, into the slow cooker though I agree with someone that on-the-bone chicken is better for slow cooking, thighs are great.
