Can you freeze Brie?
It says not on the packet but I wonder if not why not

I don't know but would cheese not keep OK without being frozen?
You can freeze it not problem, it is the sludge it becomes after it is defrosted that is the problem.
Why not try freezing a small piece?

But could you make cheese sauce after freezing it?

The problem with freezing soft cheeses such as Brie is that they tend to dissolve all over the plate when defrosted!
Just froze a piece of brie and thawed it, no apparent change it was pretty ripe so texture wasn't an issue.
