Does anyone have any good low fat recipes using everyday food?

can you define low fat please?
One of my healthy, low fat and quick meals is this: cook some pasta, steam a salmon fillet in the mcrowave, heat through small tin sweetcorn - mix together with Kraft no fat french dressing (the one with the blue top), season. A dollop of low fat Hellmans makes it creamier, but adds to fat content and I generally don't bother.
Woofgang, less than 3% saturated fat is usually seen by dieticians as "low fat".
Try this tasty one - a skinless boneless breast of chicken slit underneath to open it up, taking care not to cut through it. Take some sundried tomatoes soaked in white wine (for about 1 hour) with some herbs/spices etc. Stuff the hole made, close over & wrap with a large thin slice of ham, like sandwich ham, from the deli.Secure the stuffed flap underneath with a cocktail stick cover in foil & bake in an oven, approx 200oC, in a little chicken stock for about 30-35 mins, remove foil for last 5 mins. Yum!!
To make things creamy but lower in fat I often use pumpkin and soy milk, then just a little low fat ricotta, sour cream, or ground cashews. One terrific thing I recently learned was coconut cream substitute - low fat evap milk and coconut essence. Can't wait to try that in my African chicken curry.
