I'm looking for a hardy herb that will spread to fill gaps
Most important is it must be slug proof

What about oregano and thyme are they slug proof?

Other great slug resistant plants are any with pungently fragranced leaves, so herbs such as lavender, parsley or rosemary are a good choice for the slug-free garden.

I have a lovely lemon scented Thyme and I don't have a slug problem but I was told once to put some small stones around my plants to deter the slugs as they don't like to cross them.
